Summer pizza day – our first of the season! I think this time of year is my favorite for pizza making. Pizzas are so quick and easy and I love the opportunity to use fresh summer produce and herbs. The topping ideas I have brewing in my head are endless.

Also, nothing beats a roasted tomato pizza with fresh burrata cheese. I know it’s a tried and true classic, but we love to make it over and over all summer long. It’s just so delicious!

Incorporating caramelized onions and fresh herbs only adds to the deliciousness. They make the pizza feel just a little more special.

I’ve been making this pizza summer after summer for years now. The ingredients have stayed the same, though my herbs do vary, but the process has been streamlined. I think I’ve kind of perfected it!

Now some details

Step 1: the dough 

I use the dough recipe from the HBH Every Day cookbook. It’s my go-to and the pizza dough I use almost every week when we have pizza night.

Simply mix warm water with yeast, then add flour, bread flour, and salt. I knead the dough with a stand mixer for about 5 minutes, then let it rise for an hour or so. And then it’s ready to go, nothing fancy!

Step 2: the onions and the tomatoes

Before I add the onions and tomatoes to the pizza dough, I like to caramelize them in the oven. This really intensifies their flavor and makes them even more delicious.

Toss the onions with cherry tomatoes and big, big handfuls of fresh herbs. I use thyme and oregano with a nice pinch of chili flakes. Then I also like to add some honey. The honey helps to caramelize the onions and add a little sweetness to those roasted cherry tomatoes – totally delicious.

Step 3: assemble 

Now that we’ve pre-roasted the onions and tomatoes, we can assemble the pizza.

Gently push the dough into a nice big circle. Then add the onions and about half of the tomatoes, and then the cheese. I’ve been using a creamy gouda lately and it’s just delicious.

Finish the pizza with the remaining tomatoes.

Step 4: bake

Cook the pizza at a super high temperature, ideally on a pizza stone if you have one. It will take 10 or so minutes to cook up.

When the pizza comes out the cheese should be bubbling up around the tomatoes.

Step 5: the burrata 

Add the burrata to the hot pizza. Let the cheese sit for a few minutes to really melt into the warm pizza. Now add fresh basil and some oil. I like to do a few more chili flakes too. Then simply slice it up!

This pizza is perfect on a warm night with your favorite drink in hand, preferably shared with your favorite people. Because everyone likes a good slice of cheese pizza with friends!

This one is meant to be eaten hot, so enjoy every last bite!

Family and friends will LOVE this pizza with its crispy cheesy crust, tomatoes, pepperonis, and herbs. The cheese in the middle is super melty too! Oh, and donโ€™t skip out on adding a little honey on top (itโ€™s mine and Asherโ€™s favorite). It makes every bite really, really good!

Instructions

  • 1. Preheat the oven to 450ยฐ F.
    2. In a baking dish toss together the onions, shallots, garlic, tomatoes, and herbs. Pour over the olive oil, honey, and season with salt, pepper, and chili flakes. Bake 20 minutes, until the tomatoes burst.
    3. On a lightly floured surface, push the dough out int a 10-12 inch circle. Transfer the dough to a baking sheet.
    4. Arrange the onions, shallots, and 1/2 the tomatoes over the dough. Scatter the gouda cheese over the onions, then arrange the remaining tomatoes on top. Reserve the oil in the pan for serving.
    5. Bake for 10-15 minutes or until the crust is golden and the cheese is bubbling. Remove from the oven. bread the burrata over the pizza and let it melt into the pizza. Add fresh basil and the reserved oil. Slice and enjoy!

    I have made this pizza a number of times, and it is a family favourite.
    We absolutely love it!
    Dinner at our house on Friday night is a “Mystery Pizza” night.
    What it really means is that with all the choice on your web site, it is always a mystery
    as to which one we are having. Many times I open up the site and say “OK, what pizza will we have tonight!”
    I also use your pizza dough recipe, with great success.
    My wife says it is better than any store bought version.

    Our pizza was delicious, thank you for the recipe. Unfortunately, the juice from the tomatoes created a hole in the crust and it made a mess. Next time I am going to cut the tomatoes during their baking time to see if that helps remove some of the wetness prior to putting them on the crust.

    Like others, was a bit concerned about the amount of moisture from the roasted tomatoes. Pleasantly surprised that my dough held up, and the pizza was delicious as a result. Made no alterations, and wonโ€™t when we make this again (which will be very soon).

    Love your recipes and have been following you for years and have all your cook books!

    The flavor was delicious of this pizza. I made it on a Kamado Joe charcoal grill set on 400 degrees. I used 16oz pizza dough, left the pizza on the grill for 20 minutes, put the burrata on and then put it back on the grill for 1 minute. It was very flavorful, only complaint I heard from my family was the toppings were falling off and that the dough was a little oily. Do you think letting the dough cook longer would prevent that? Or is there an ingredient that would hold the tomatoe/onion/garlic mixture to the dough better?

        We love this pizza!! We make it every other weekend. First time we made it was at a tiny house in a Winery for our anniversary. We used their fresh herbs and added peppers they had in their garden. It is my favorite pizza EVER! I buy the Trader Joeโ€™s pizza dough to make it a quick dinner. 10/10.     I was skeptical about how the end product would be but I am very blown away how great this pizza turns out, very simple to make, just need a bit of time (like all pizza). I also was missing the cheese and used mozzarella in a pinch, so Iโ€™m excited to make this again with the right stuff.
