These easy, Homemade Strawberry Shortcake Ice Cream Bars are the healthier dessert we all need to have stashed away in our freezers this summer. Made simply with just 7 ingredientsโ€ฆcreamy coconut milk, strawberry jam, vanilla, white chocolate, coconut oil, dried strawberries, and brown rice crispies. It does not get any simpler. Theyโ€™re extra creamy, so fruity, and so very delicious. These pops are everyoneโ€™s favorite, from kids to adults. The perfect summer dessert to keep stocked in the freezer for the hottest days of the year.

As a kid, my cousins and I would spend our summer days at the pool or swimming in the lake. Days spent at the pool meant weโ€™d be hitting up the snack bar for chicken fingers, fries, milkshakes, and ice cream. Basically all the kid favorites. 

We loved the snack bar and the pool snack bar always had the best options. Occasionally I would change up my ice cream order and get those cookies and creme ice cream bars. Or sometimes I’d get the strawberry shortcake bar. I loved chocolate, but oddly, I really enjoy a strawberry shortcake ice cream bar too. 

Last summer I really wanted to recreate that strawberry shortcake ice cream bar. But by the end of the summer, I just couldnโ€™t get the recipe right. It was too complicated with too many steps. I was making it harder than it needed to be, so I just gave up. 

But then a couple of weeks ago I made these with only 7 very simple ingredients and they turned out perfect! The exact strawberry shortcake ice cream bar I wanted to recreate! 

And so simple to make! I love these! Theyโ€™re pretty, no fuss, and so delicious!! And I’m very excited to share them with you guys today!

The process 

So these really are so straightforward. They can even be vegan if you’d like them to be! 

The ingredient list includes coconut milk (or heavy cream), high-quality or homemade strawberry jam, vanilla, white chocolate, coconut oil, and dried strawberries. All basic ingredients! 

Blend the coconut milk or cream with the strawberry jam and vanilla. If you’re using heavy cream, be careful not to over mix or youโ€™ll end up with whipped cream.  Pour the mix into popsicle molds and freeze. That’s the base of your ice cream bar, just 3 ingredients!

Once the bars are frozen, make the magic shell. Instead of a chocolate shell, weโ€™re going to make a white chocolate shell. Just white chocolate mixed with coconut oil, that’s it. When you’re melting the white chocolate you have to be careful not to burn it. So go slow while melting, I usually use the microwave. 

Once the chocolate is melted, smash the dried strawberries together with the brown rice crispies. Dip each frozen bar into the magic shell, then roll through the strawberry crumbs! Itโ€™s honestly a really fun process if youโ€™re looking for your kids to help. And super easy for them too!

So, why are these better than store-bought?

There are so many reasons!

Most importantly, these pops are actually creamy because of canned coconut milk. They also have real fruit jam. Just be sure to find a great high-quality jam. I LOVE The Little Market jams), and theyโ€™re made so much healthier.

  • 1. In a bowl or a blender, blend together the coconut milk or heavy cream, strawberry jam, and vanilla.
    2. Evenly divide the mix between 8 popsicles molds or use paper dixie cups.
    3. To make the magic shell. Melt the white chocolate and coconut oil together in the microwave. Cook on intervals, stirring every 30 seconds until smooth. Let cool 10 minutes.
    4. Add the dried strawberries and rice crispies to a blender or ziplock bag. Crush into fine crumbs, then place into a shallow bowl or pie plate.
    5. Remove the pops from the freezers and cover in white chocolate, then roll through the strawberry crumbs. Eat or keep in the freezer until ready to eat!

  1. I tried making these with coconut milk, coconut cream, and refrigerated strawberry jam (bonne maman)

    Blended together with vanilla in the vitamix and the whole mixture split or the coconut fat coagulated ๐Ÿ™

    Still refrigerated to see how it comes out.

    Any tips? Should I blend on lowest speed? (I only went up to 3 maybe) or maybe I use room temp jam next time?

    1. I warmed up the mixture keeping a close eye because coconut milk changes fast and it worked undo all the coagulated fat ๐Ÿ‘๐Ÿฝ Iโ€™ve put it back in the freezer now ๐Ÿคž๐Ÿฝ๐Ÿคž๐Ÿฝ

    Just made these for 4th of July. They look ๐Ÿคฉ
    I used less freeze dried strawberries & more Rice Krispies; made some with dark chocolate & some with white chocolate.
    Definitely a more process driven recipe, but worth the effort!

  3. Excellent recipe! Thanks for sharing! These bars were a hit! Used the coconut milk. Donโ€™t really care for Rice Krispies so I substituted with coarsely crushed graham wafers. Was perfect! Hard to find dried strawberries and very pricey, so I fished them out of a box of Special K with Strawberries and chopped them up. That did the trick!

    These sound great! I love the strawberry shortcake bars from the store. My question is does the original have white chocolate? I’m hesitant to make these because I’m not really a white chocolate fan, but I know they have a place in certain things. Do the rest of the ingredients mask the white chocolate flavor?

      You can use another neutral oil like avocado in place of the coconut oil, I wouldn’t recommend heavy cream or omitting it. Please let me know if you have any other questions! xT

    Have been meaning to try this recipe for weeks. Finally did so today. A couple of modifications: I used two cups of coconut milk and 1 cup full fat yogurt. Delicious. Dehydrated strawberries are hard to find and very expensive so I used strawberry drink crystals from the bulk store which worked well. My only warning is you have to work quickly after you apply the white chocolate coating as it freezes almost immediately upon contact with the frozen bars making it difficult for the fruity/crunchy coating to stick. Also this was my first time using silicone molds. I found pushing from the bottom was a much easier way to get the bars out. Overall a delicious summer treat which I will definitely make again.

    Loved this! Do you have a tip for keeping the ice cream creamy? Yours looks so creamy and mine turned out a bit โ€œiceyโ€. Used heavy cream from our local dairy, liquid vanilla extract (was yours powdered?) and bonne maman strawberry preserves and blended in the vitamix. My mixture was thin – Still absolutely delicious and fun to make – but I want creamier ice cream. Any tips? Thanks!!

    We made these and they were delicious! We loved the coconut milk flavor, and they were creamy and sooo good. We used red white and blue rice krispies, so they came out almost purple. Our molds weren’t the best, so we’re putting the metal ones on our wish list:) Thank you, they were a fun activity on a super muggy day when we didn’t want to go outside.

      1. Hi! I just Made these and I had Left over ice cream mixture so I put It in an ice cream friendly container.
        Tasted it after it had been in the freezer all night and the ice cream is delicious!!
        I just Donโ€™t know how Iโ€™m going to get the bars out of the containers!! I used The silver ones that you posted!!
