Chewy, crisp Chocolate Dipped Sesame Oatmeal Bars. Everyone will love these easy, wholesome chocolate bars! Sweet and salty with just the right amount of CRUNCH, these oats n’ honey sesame bars are mixed with old-fashioned oats, nutty sesame seeds, brown rice crisp cereal, sweet honey, and vanilla. They’re baked until crisp, then cut into bars and dipped, dunked, or drizzled with chocolate. Toasted sesame seeds go on top. So delicious!
It’s the first Friday of the new year, and some things never change – we’re again talking all things chocolate! I could have shared a handful of other recipes today, but I couldn’t let the first week of the new year pass without sharing something on the sweeter side.
These are the perfect chocolate bars to indulge on this year. They still satisfy your sweet tooth, but instead of being packed with white flour and processed sugars, like our beloved December cookies, these bars are made with nutrient-rich ingredients: ground flax, sesame seeds, oats, and dark chocolate!
After a couple of months of sharing nothing but sugar-filled cookie recipes, I’m excited to embrace less sugar. January allows me to be super creative with the sweets – sometimes even healthier desserts can be our favorites!
Recipe favorites like my maple banana bread, these peanut butter “Twix” bars, and these tahini oatmeal chocolate chip cookies are LOVED year-round.
Today, we have a new kind of bar, one with a bit more crunch. I already know I’ll be making these often this winter. Those toasted sesames on top are the secret to a delicious, healthier chocolate bar!
Here are details
Step 1: mix the dry
A combination of old-fashioned oats, sesame seeds, almond flour, and ground-up flax seeds. The sesame seeds are not your usual dessert ingredient, but just like peanuts, they’re delish when used in sweet chocolate recipes.
Step 2: mix the honey
Take the honey, warm it together with coconut oil, and then add vanilla. Now, pour this sweet mix over the oats and stir everything together until all the oats and seeds are coated.
Step 3: bake
Just two steps in and we’re already baking. Woohoo!
Press the cookie dough into a square brownie pan. Be sure to pack the dough into the pan firmly. Now bake until you smell the bars getting toasted, about 20 minutes.
Let the bars cool in the pan. Then, I like to cut these while they’re still soft. I think it’s easier this way.
Step 4: dip/dunk/cover in chocolate
Once the bars are fully cool, you can dip, dunk, drizzle, or even cover them in chocolate. It’s totally up to you!
Personally, I like to mix and match. I dip some, drizzle others, and then completely cover some in chocolate for the people who really love a chocolatey chocolate bar.
Before you let the bars set, sprinkle the melted chocolate with toasted sesame seeds. These are what make the bars feel indulgent and taste so delicious!

Chocolate Dipped Sesame Oatmeal Bars

Ingredients
- 1 1/2 cups old-fashioned oats
- 1/2 cup sesame seeds
- 1/2 cup brown rice crisps cereal
- 1/4 cup almond flour
- 3 tablespoons ground flax seeds
- 1/4 teaspoon baking soda
- 1/2 cup honey
- 2 tablespoons melted coconut oil
- 2 teaspoons vanilla extract
- 12 ounces dark chocolate, melted
- 2 tablespoons toasted sesame seeds, for topping
Instructions
- 1. Preheat oven to 350ยฐ F.ย Line an 8×8 inch square pan with parchment paper.2. In a bowl, mix the oats, sesame seeds, brown rice crisps, almond flour, ground flax seed, and baking soda.3. Warm the honey and coconut oil together in the microwave, then pour over the oats. Add the vanilla and mix well. Press the dough into the prepared pan. I like to use the back of a measuring cup to firmly pack the dough into the pan. 4. Bake for 20 to 25 minutes, until golden on top. Let cool for 10-15 minutes, then cut into bars. Cool completely before dipping. 5. Cover/dip each bar in chocolate and sprinkle with toasted sesame seeds. Freeze for 10 minutes to set the chocolate. Eat or store in the fridge.
These are amazing. I actually got 32 bars because I found they were a little rich at the original size. Lovely dessert with an orange and cup of tea.

I have tried these a few times and with a few adjustments, got them to stick together! I added 1/2 cup of peanut butter, an extra 1/2 cup brown rice cereal, and some dried fruit. They have been turning out so good!

Although delicious, they did not stay together. I even cut them at different times to see if theyโd set. I enjoyed making them and will still enjoy eating them. definitely inspired me to make more homemade granola bars

This recipe is so delicious, but the bars don’t stay together! I followed everything to a T, and even put them back into the oven for a little bit to see if that would help. Unfortunately, I think this will be more of a chocolatey granola.

Iโm so bummed because these didnโt hold together for me at all. Followed the recipe exactly and even pushed down firmly with the back of a heavy duty measure cup. Ugh. They taste good and Iโm bow gonna use it as cereal/granola instead to not waste it.

These fell apart when I tried to cut them, what could I have done better? Followed everything exactly?
These were really goodโฆcame out great! Didnโt have the flax seed so eliminated it. I also used corn flakes instead of brown rice cereal. Great flavorโฆsesame really comes through. Super easy to make! Might try adding sone peanut butter next time. Thanks for the recipe!

The mix for these bars smelled so good and was so yummy! I added some friend fruit and pecans for a little extra nutrients. They turned out delicious, but I must have done something wrong. They did not stick together well and ended up more like a granola! Still delicious and filled with good whole ingredients. I will definitely try again, but will enjoy snacking on these a bunch.

So good. Iโm always looking for a healthyish treat.. I made them according to recipe.. then the 2nd time made some changes: I used half honey/half maple syrup, added chopped dried cranberries and chopped pistachios. I only had a tbsp of sesame seeds, didnโt affect the outcome. I used regular flour. I also drizzled instead of dipping. Iโm sure the key to getting them to stay together is packing them firmly into the pan- the measuring cup trick worked great for me! Will make again!
