Strawberry Lemonade Aperol Margarita. Mixed simply with sweet strawberries, orange liquor, tequila, and the twist on this drink – Aperol and lemon. Simply blend with ice and finish with spicy/sweet ginger beer. A refreshing summer cocktail that’s perfectly icy, sweet, spicy and so delicious! The salted Tajin-lined rim keeps everyone coming back for a second round. Make my mocktail version to serve up to family and friends who don’t drink – everyone loves strawberry margaritas!
And we’re back! It’s the summer edition of our favorite HBH feature, Cocktail Saturday. I don’t plan to share a new cocktail every Saturday this summer, but a handful here and there for sure!
Then it will be back to regularly scheduled programming come fall with a new drink every Saturday!
For now, I’m very excited to tell you all about this fun margarita. It truly is summer in a cocktail. Such a great way to celebrate the Memorial Day weekend. Also, the colors are even a little patriotic too!
Here are the details
You’ll need lots of fresh strawberries, a bottle of your favorite tequila, Aperol, Cointreau, and lemon and lime juice. And then top with a spicy-sweet ginger beer to sweeten things up!
The Aperol gives the margarita a special touch with its sweetness and hints of orange and vanilla. Such a unique but delicious combination with spring/summer strawberries!!
The addition of lemon adds a kick that’s unexpected yet so delicious. I love the pairing of lemon with tequila and berries.
Since fresh strawberries are at their ripest these days, I decided I’d use lots of them in this fun drink. Using fresh berries is key, but we need to muddle them down to release the sweet juice.
Step 1 – rim your glass with Tajin
I mix Tajin spice blend with flaky sea salt, then run a lemon wedge around half of my cocktail glass and rim each glass with Tajin salt. Do not skip this. It’s so yumm!
Step 2 – muddle the berries
Muddle the strawberries together with the tequila. This helps to infuse the tequila with great flavor all while squeezing out the juices from the berries.
Step 3 – shake and strain
Add the Aperol, Cointreau, lemon juice, and lime juice. Fill with ice and shake until combined. Then strain the drink into your prepped salty Tajin-rimmed glasses.
Step 4 – Top it off
Finish off each margarita with ginger beer, garnish as desired, and enjoy every spicy-sweet sip!
Simple, unique, delicious, and so pretty too.
Hope you guys have a wonderful Memorial Day weekend. Be sure to kick off summer with a fun cocktail or mocktail in hand!

Hi! Is this possible to be made into a mocktail?
Hey Erin,
You bet, just follow the cocktail instructions listed above:) I hope you love this recipe! Cheers! xT
I fell in love with this drink last summer and I’ve been thinking about it ever since! I like to make a big batch in the blender and then strain it. I’ve found I can use less strawberries than the recipe calls for this way.
Thanks so much Amy!! Love to hear that this dish turned out well for you and I appreciate you making it:) xT
Oh yum! Interesting summer in a glass. We were able to make it in a pitcher ahead of time for a dinner party; except for the ginger beer to top.
oops – forgot the 5 star rating
So glad you are loving this recipe! Thanks for trying it out! xT
Loved it!!
Hi Adriana,
Happy Friday!!🫐🍓 I love to hear that this recipe was enjoyed, thanks a lot for your comment and making it! xT
This looks great! If making a large batch ahead of time , would you recommend omitting any of the ingredients? I imagine finishing with ginger beer and not adding that to the batch is ideal. Would you recommend leaving the aperol out until finish as well?
Hey Brittany,
Yes, I would wait to add the ginger beer until you are ready to serve, the aperol should be just fine. I hope you love this recipe! Cheers! xT
How can i make a big batch ahead?
Hey Ali,
You can go ahead and adjust the serving size and all of the ingredients will automatically adjust for you! Let me know if you have any other questions! Cheers! xT
I would like to make this for a party this weekend – how would I adjust for a pitcher?

Wow, my new favorite, Thank you so much, I made it as a slushy and added sugar instead of salt with the tajin, for a sweet and salty taste. A hit for sure!

This drink is so good! I’m always looking for something to use up my aperol because I bought it when it was at its height with aperol spritzes and I thought I was cool, but it was turns out, I don’t love aperol. BUT this drink is soooo good! I also gave it to my husband who likes it, too! Pro tip: second time I made it, I was out of strawberries, so I used strawberry jam as a replacement and it worked wonderfully!
Love to hear this Dana!! Thanks so much for trying this recipe and your feedback! Have a wonderful weekend!🌈🌤️ xT
