Frozen Chocolate Covered Banana Bites, like a mini ice cream bar, but much simple and much healthier. These treats are so easy to make with only 3 core ingredients and zero baking, nothing not to love! Frozen banana slices with your favorite assortment of toppings, covered in chocolate, and finished with a dusting of flaky sea salt. Let your taste buds run wild with fun toppings. Peanut butter, pretzels, honey, coffee, coconut, jam, and cinnamon sugar are just some of the ideas I came up with. But really, the options are endless. Create your favorite combination. These cups are so delicious, theyโre the perfect healthy-ish summertime treat!
Asher has been complaining that I never make chocolate desserts anymore. And while that’s obviously not true, I have definitely slowed with the overly sweet chocolate desserts. I’ve been putting a little more focus on lighter summer dessert recipes – I just make what we’re craving.
And ever since my mom has mostly stopped eating added sugar, I’ve been more conscious of creating low-sugar sweet recipes. That means that fruit-based options and a good amount of vegan chocolate desserts have been higher on my to-make list.
Asher doesn’t love it, but I’m all about it, as is my mom.
Point is, there’s been a lack of sweet chocolate desserts around. While I was hiking, I was randomly thinking about dessert recipes and fun frozen recipes I could share with you all. I have so many ideas for ice and fruit-based sweets this summer – and I’m surely embracing both. But then this idea floated into my head.
Chocolate-covered frozen bananas with an assortment of yummy toppings, plus a little sprinkle of sea salt on top.
I knew it wasn’t a concept that hadn’t been done before. But it was one I personally just wanted to make and enjoy. So here we are. This is much more of an idea than a hardcore recipe. Regardless, these fun bites are the simplest to make and so freaking delicious.
You really just need 3 ingredients – bananas, chocolate, and coconut oil. Whatever toppings you choose is up to you!
I start by slicing bananas into slices, then arrange them on a parchment-lined baking. I add toppings to each slice, then freeze for a bit. This step probably is not necessary, but I find working with semi-frozen slices to be easier and much less messy.
While the slices freeze I melt lots of chocolate with coconut oil and line a cupcake mold with paper liners. You can use a mini mold or a regular mold, but I prefer the mini if you have that size!
When ready, I add a small amount of chocolate to each paper cupcake liner and then the frozen banana slice. Then pour the chocolate overtop to mostly cover the slice. The amount of chocolate will really vary depending on how little or big you’ve made each slice of banana.
My best tip is to try not to overload the banana slices with toppings. I know it’s tempting, but if you pile on too many toppings, things just get messy.
Lastly, freeze until totally frozen. See, easy, and honestly fun to make too.
These are the fun part. There are so many combinations you can and should do!
– assorted nut butters
– jam + cherry or raspberry on top
– peanuts + honey
– cinnamon sugar
– honey + toasted coconut
– peanut butter + pretzels
– pistachios + honey
– instant coffee/espresso powder + toasted hazelnuts
– honey + sea salt
– roasted nuts/seeds
– jam + coconut
I mean, I could go onand on! But even bananas + chocolate + sea salt are delicious. Though in my book, a drizzle of honey makes that combo even better.
Our favorite? Obviously chocolate, banana, peanut butter, honey, and sea salt. Like a peanut butter cup, but better because the frozen banana tastes like vanilla ice cream.
So yummy. Take my word, youโre going to LOVE these!
