DRESSINGS & SAUCES
Chili Oil
โข3/4 cup sesame oil
โข1 tablespoon fresh grated ginger
โข2 cloves garlic, grated
โข1 tablespoon chile sauce
โข1-3 tablespoons chili flakes, to taste

โข3 tablespoons sesame seeds
โข1 teaspoon honey

Combine the ginger, garlic, chile sauce, chili flakes, paprika, 2 tablespoons sesame seeds, and honey in a heat proof bowl. Heat the oil in a skillet over medium heat until it sizzles, 5 minutes. Pour the oil over the spices, stir to combine, then add 2 tablespoons tamari/soy sauce.

Spicy Mayo
โข1/3 cup olive oil mayo
โข1 to 2 tablespoons sriracha
โข2 teaspoons soy sauce or tamari
โข1 teaspoon honey
To make the Spicy Mayo, combine all ingredients in a small bowl.

Spicy Ranch
โข 1/2 cup plain Greek yogurt or sour cream
โข 2 tablespoons buttermilk
โข 2 tablespoons fresh chopped chives
โข 1 finely chopped jalapeรฑo (seeded, if desired)

โข 1 teaspoon dried parsley

Ceasar Dressing
โข1/2 cup extra virgin olive oil
โข1/2 cup tahini
โข1/4 cup lemon juice
โข1 tablespoon dijon mustard
โข2 teaspoons Worcestershire sauce
โข1/4 cup grated parmesan cheese, plus more for serving
To make the dressing. Combine all ingredients in a blender and blend until smooth. Add 1/4 to 1/2 cup water to thin the dressing. Taste and adjust the salt.

Herb Dressing

Cilantro Lime Vinaigrette

Avocado Ranch Dressing
โข1 small avocado, pitted and peeled

โข1/4 cup pickled jalapeรฑos

Combine all ingredients in a food processor or blender with 1/3 cup water. Blend until creamy, adding more water as needed to thin. Taste and adjust the salt and pepper.

Zhug (herby green sauce)
โข1 bunch fresh parsley
โข1 bunch fresh cilantro
โข1 large jalapeรฑo, seeded if desired
โข1 clove garlic, finely chopped or grated
โข1 teaspoon ground cumin
โข1/2 teaspoon ground turmeric
โข1/3 cup extra-virgin olive oil
โข2 tablespoons fresh lemon juice
Combine all ingredients in a food processor or blender. Pulse until finely chopped. If the sauce is too thick, add water, 1 tablespoon at a time to thin.
Lemon Tahini: Combine 1/2 cup tahini, 3 tablespoons lemon juice, 1/2 teaspoon garlic powder, 1 teaspoon honey, and 1/4 cup water in a blender and blend until smooth. If needed, add water to thin the sauce as desired. Season to taste with salt.
Mango Harissa: In a blender, combine 1/2 cup red harissa sauce, 1 cup diced mango, and 1/4 cup pickled jalapeรฑos, blend until smooth.

Homemade Barbecue Sauce
โข1 1/4 cups ketchup preferably organic
โข1 cup dark brown sugar
โข1/4 cup molasses
โข1/4 cup pineapple juice or you can sub apple cider vinegar
โข1/4 cup water
โข1 tablespoon worchestire sauce
โข2 1/2 teaspoons ground mustard
โข2 teaspoons smoked paprika
โข1/2 teaspoon garlic powder
โข1/4-1/2 teaspoon cayenne pepper use less if you don’t like the heat
โข1 1/2 teaspoons kosher salt
โข1 teaspoon pepper
Combine all the ingredients size sauce pot. Bring to a boil and reduce and simmer for five minutes or until all the sugar has dissolved. Serve immediately or cover and store in fridge.

Ground Spicy Italian Chicken Sausage

Marinated Olives
โข1/3 cup extra virgin olive oil

โข1/4 cup basil chopped
โข2 tablespoons chopped thyme

In a bowl, whisk together the olive oil, balsamic vinegar, fig preserves, garlic, shallots, lemon zest, basil, thyme, and chili flakes. Add the olives, then add the sun-dried tomatoes with oil and toss to combine. Let sit 30 minutes or up to 5 days in the fridge.

Candied Jalapeรฑos
โข1/3 cup honey
โข1/4 cup jalapeรฑos
โข2 tablespoons apple cider vinegar
Bring honey to a gentle boil. Simmer over low for 3-5 minutes. Meanwhile, arrange sliced jalapeรฑos in a glass jar. Pour the honey over the jalapeรฑos. Add apple cider vinegar and a pinch of salt. Let cool. Keep stored in the fridge for up to 2 weeks.

Homemade Tortilla Chips

Cut corn tortillas into triangles. Drizzle in olive oil & bake at 425 for 8-12 minutes
Homemade Taco Shells
โข corn tortillas
โข olive oil
Place tortillas in between a damp paper towel and place in microwave. Warm 8-12 corn tortillas for 30 seconds to 1 minute in the microwave, until pliable. Then place them on top of a sheet pan and rub them with olive oil. Use some tin foil to make a โmoldโ for the shell to sit on. Simply mold the foil into a cylinder shape and drape the tortillas over the foil. Bake until crispy, 425ยฐ for 12-15 minutes.

Perfect Rice
โข3 cups water
โข1 1/2 cups rice
Bring 3 cups water to a boil. Add rice. Cover and cook on LOW for 10 minutes. Turn the heat off and let sit, covered another 15 minutes (donโt take any peeks inside!) Fluff with a fork
Coconut Rice: Combine the 1 (14 ounce) can coconut milk and 1/2 cup water in a medium pot. Bring to a low boil. Add 1 cup jasmine rice and a pinch of salt. Stir to combine, cover, then turn the heat down to the lowest setting possible. Allow the rice to cook for 10 minutes on low, then turn the heat off completely. Let the rice sit, covered, for another 15-20 minutes (donโt take any peeks inside!).

Garlic Bread
โข 1 loaf French bread
โข 1 stick of butter
โข 1-2 cloves chopped garlic or 2 teaspoons garlic powder
โข 1 tbs dried oregano
โข 1 teaspoon dried thyme
โข 1/2 cup grated parmesan
Cut the loaf length wise. Spread butter mixture over bread, bake at 400 for 10-15 minutes.
Boiled Eggs
Bring 1 inch of water to a boil, add cold eggs from the fridge, cover and boil 5-6 minutes. After 6 minutes, remove the eggs from the pot and place them in an ice water bath or run under cold water. Peel, and enjoy!

HOMEMADE DOUGH
Pizza Dough
โข1/2 cup warm water
โข1 1/2 teaspoons active dry yeast
โข21/2 cup bread flour
โข1/2 cup white whole wheat or whole wheat pastry flour
โข1/4 teaspoon kosher salt
โขextra virgin olive oil
In a large bowl, combine the water and yeast, stirring to dissolve. Let sit 5 minutes. Add in the bread flour, whole wheat flour, and salt, stirring with a spoon until the dough comes together but is still sticky. On a floured surface, form the dough into a ball. Knead the dough for 5 minutes or until smooth. Alternately, all of the mixing and kneading can also be done in a stand mixer with the dough hook attachment. Rub the same bowl with olive oil, then place the dough inside, turning to coat. Cover with plastic wrap and place in a warm place for 2-4 hours, until doubled in size. Makes 1lb of pizza dough.

Egg Noodles
โข2 cups flour
โข3 eggs
โข1 egg yolk
โขpinch of salt
Add the ingredients and mix until dough forms. Knead together into a dough ball, adding small amount of water as needed. Let rest 10 minutes, then roll out, cut into noodles, and boil.

Homemade Graham Crackers
โข 1 1/2 sticks (12 tablespoons) softened salted butter
โข 1/4 cup molasses
โข 1/4 cup honey
โข 1 teaspoon vanilla
โข 2 1/4 cups flour
โข 1 teaspoon baking soda
โข 1 teaspoon cinnamon
โข 1 teaspoon ginger
โข 1/2 teaspoon kosher salt

Preheat oven to 350ยฐ F. In a bowl, cream together 1 1/2 sticks (12 tablespoons) softened salted butter, 1/4 cup molasses, 1/4 cup honey, and 1 teaspoon vanilla until combined, 3-5 minutes. Add 2 1/4 cups flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1 teaspoon ginger, and 1/2 teaspoon kosher salt. Beat until combined. Add 1 tablespoon of water at a time, until the dough comes together and forms a ball.
Divide the dough in half. Roll out one disk of dough between two floured pieces of wax paper to about 1/4 inch thickness. Cut 24 squares (roughly 2ร2 inches). Transfer the cookies to a parchment-lined baking sheet. Repeat with the remaining disk of dough.
Sprinkle 1-2 teaspoons of cinnamon sugar over the cookies. Bake for 10-12 minutes. Let cool.
BUTTERS & SPREADS
Brown Butter
โข 2 sticks (1 cup) salted butter, at room temperature
1. Place the butter in a small saucepan set over medium heat, cooking until the butter begins to brown, about 3-4 minutes.
2. Stir as it continues to melt. Once itโs brown, remove from the heat and transfer to a heatproof bowl. Stick in the freezer to chill, 10-15 minutes, but no longer.
Strawberry Vanilla Jam
โข3 cups sliced strawberries
โข1/4 cup honey
โข2 teaspoons lemon juice
โข 1 teaspoon vanilla
Add to a medium-size pot set over high heat. Bring the mixture to a boil. Once boiling use a potato masher or fork to break down and mash the berries. Continue to cook for 5 minutes or until the jam has reduced and thickened by 1/3. Remove from the heat and stir in the vanilla. Let cool.

Pumpkin Butter
- 2 cans (15 ounce) pumpkin puree
- โข1/3 cup apple cider
- โข1/2 cup real maple syrup, plus more if needed to sweeten
- โข1 tablespoon vanilla extract
- โข1 tablespoon pumpkin pie spice
- โข1 teaspoon cinnamon
- โข1/2 teaspoon kosher salt
Slow Cooker Instructions:
1. In the bowl of your slow cooker, combine the pumpkin, cider, maple syrup, vanilla, pumpkin pie spice, cinnamon, and salt. Cover and cook on high for 3-4 hours. During the last 45 minutes of cooking, remove the lid to allow the pumpkin butter to thicken. Taste, adding more maple syrup if needed to sweeten.
2. Turn off the heat and let cool (the pumpkin butter will thicken as it cools). Transfer to glass jars and keep stored in the fridge for up to 1 month or in freezer safe containers for up to 3 months.

Apple Butter
โข4 pounds Honeycrisp apples, cored and diced
โข1 1/4 cups apple cider
โข1/2 cup real maple syrup
โข1 teaspoon vanilla extract
โข2 teaspoons cinnamon or 1-2 cinnamon sticks
โข1/2 teaspoon freshly grated nutmeg
โข1 pinch ground cloves (about 1/4 teaspoon)
โข1 pinch sea salt or kosher salt
Slow Cooker Instructions:
1. In the bowl of your slow cooker, combine the apples, apple cider, maple syrup, vanilla, cinnamon, nutmeg, cloves, and salt. Cover and cook on low for 8-10 hours or on high for 4-5 hours, stirring halfway through cooking.
2. Remove the cinnamon stick and then transfer the apples to a blender and puree until smooth. Return to the crockpot and cook, uncovered on high for 1-2 hours or until slightly thickened. Taste and adjust sweetness level to your liking by adding more maple. Cool and store in glass jars in the fridge for up to 1 month.
Instant Pot & Stove Top Instructions:
Homemade Maple Apple Butter.
Whipped Pumpkin Butter
โข6 tablespoons salted butter
โข1/3 cup pumpkin butter
โข1 teaspoon vanilla
โขto make it sweeter, add 1-2 tablespoons maple.
Whip all the ingredients together.
OTHER FAVS
Vanilla Sugared Rosemary
โข 1 cup granulated sugar
โข 1/2 teaspoon vanilla bean seeds
1. Line a baking sheet with parchment paper. Combine 1 cup granulated sugar with 1/2 teaspoon vanilla bean seeds.
2. Gently run rosemary sprigs under a little water to dampen and place on the prepared baking sheet. Sprinkle the rosemary with vanilla sugar on all sides, making sure the rosemary is thoroughly coated in sugar. Allow to dry on the baking sheet for 1 hour. The rosemary can be made 1 day in advance and stored at room temperature.
