Oven-roasted cauliflower slices topped with Italian seasoning, marinara sauce, melted cheese, and pepperoni. All served up mini pizza style. Top these cheesy cauliflower pizzas with fresh basil for a dinner that’s mouth-wateringly delicious. Best for nights when you’re craving something cozy. But also want something healthier that the whole family will love!
I recently did a poll on Instagram asking about more gluten-free recipes. I asked if you guys wanted them, and if so, what kinds? There were definitely mixed responses. Many of you still seem to want ALL the gluten (which you know I love). But many of you would like a few good gluten-free recipes that don’t feel boring and are easy to create!
Don’t get confused, I’m not going gluten-free on you guys. But I thought I would use this as inspiration for some new recipes. I’d like to find a few healthier takes on dishes we all love most.
Enter these mini cauliflower pizzas. Totally gluten-free, but still totally delicious.
When I started making this recipe, I wasn’t sure it was something I was going to share. Because really, do we need yet another cauliflower recipe? Probably not, but then here we are.
These little cheesy baked pizzas just turned out so good that I was too excited about them not to share. With school starting back up, and life getting busy with fall right around the corner, I thought these could be a really great after school snack or dinner. A bit of a healthier take on our favorite weeknight pizza.
Plus, I think this might just be my favorite cauliflower recipe yet. That’s kind of a bold thing to say, but there’s just something better about a cheesy cauliflower recipe. Clearly, I’m excited.
Here’s the thing about this recipe, it’s so easy, but cutting the cauliflower into slices can sometimes be challenging. I find it’s easiest to use smaller, tighter heads. They tend to hold together better than the larger heads.
Once you have the cauliflower cut into slices, simply season them up with a few spices and herbs, then roast them in the oven until they’re just tender. Try not to overcook the slices, you don’t want them to get too mushy on you.
When the cauliflower comes out of the oven, top it with all the essential pizza toppings…marinara sauce, cheese, and pepperoni. So simple, but promise these are going to be delicious.
Then throw the cauliflower right back into the oven to melt the cheese and crisp up those pepperonis.
When the pizzas come out of the oven, the cheese should be bubbling up and the kitchen should smell like the classic pizza we love.
Serve these mini pizzas up warm, right out of the oven. And with a very generous sprinkle of extra parmesan and basil.
Oh so very delicious…cheesy, perfectly spicy, a little salty, but also light and herby too. All the very good things we love. And while I know we all love real pizza, this is such a nice lighter option.
It’s such a great warming vegetable-focused meal or hearty side dish.
And if you’re trying to get your kids, your husband, anyone really, to eat more vegetables, this is the recipe to make. All my picky eating brothers agree.

This was excellent! I didn’t use nearly as much cheese as was suggested and only use mozzarella. I added some red peppers, so I think you could feel free to add another topping than pepperoni and cheese. Will be on my rotation for sure!

Personally I cut them about 0.75” to 1” if I can get away with it. 1.5” is really thick IMO and doesn’t allow for very many “pizza” from a single head of cauliflower. But of course there is more risk of them breaking when thinner. Not usually an issue if you’re careful though and cut it horizontally to keep a section of stalk in the Center of each for strength.
With a family of five we can get about 1 pizza each of we get good cuts from a large head.
Also, the photo doesn’t look anywhere near 1.5”, unless that fork is massive! Lol
